A ribbon cutting was held for the Taco Express food truck, operated by the owners of La Hacienda Mexican restaurant in Anamosa.

The truck, which hit the road back in May, had been something the restaurant had been considering for a while. Celene Fernandez said the conversations about starting up a food truck began in 2019, but it wasn’t quite feasible. Then, the pandemic hit in 2020. Fernandez said Renee Taylor of Americana Concessions was very helpful in helping them navigate the new venture.

Fermin Fernandez said they keep the offerings pretty simple: burritos, quesadillas, tacos, many of the restaurant’s more popular offerings that are easy to make for the quick service style of food trucks.

The truck was an idea to allow them to expand by allowing the business to get around new communities. That, Fermin said, has been the most exciting part of the new venture, seeing new towns and getting to meet new people.

The duo said they’ve gotten positive feedback from customers when they’ve brought the food truck around, and a lot of people seem to be enjoying it. The Taco Express has its own separate Facebook page with postings about where the truck will be making its next stop.
